The grape used to make it, the taste, the color, the smell, the feel on your tongue, the acidic quality, the velvety texture on your tongue. Shall I go on?

Yes, different types of grapes. Merlot wine is sometimes considered an 'entry-level' red wine aimed at folks becoming bored with the 'shallowness' of some white wines. Merlots are generally softer, less complex and less challenging than cabs or certainly sharaz or zins; merlots do not generally age as well as cabs. .

They are two entirely different grapes. The Cabernet usually has a fuller mouth feel and is usually not as soft as a Merlot. Try each and enjoy them. .
