Cabernet is from Bordeaux and Pinot noir from Bourgogne (burgundy)

It's just tradition - the art of winemaking is very old and has a lot of different traditions. The shape of the bottle has no effect on what the wine tastes like. You may also notice that chardonnay bottles are generally shouldered with a wide bottom where sauvignon blanc is more straight. No rhyme or reason to it - just tradition. The only bottle shape that I'd say has a specific purpose is champagne and sparkling wine bottles, which are typically made of thicker glass to withstand the extra pressure inside, plus the long, tapered neck helps in disgorging the spent yeast that collects there during bottle fermentation.
