I assume you want to know why Cabernet Sauvignon, Merlot, and Pinot Noir cannot be white wines... The reason is that red wines are made from red grapes and white wines are made from green grapes. Cabernet Sauvignon, Merlot, and Pinot Noir are all red grapes.

Red wine is made from red grapes with the skins left in the vat. If you strain out the skins, you can make white wine from the juice of red grapes.

The red colour of red wines comes from the fact that they after the grapes are crushed they are left in contact with the skins for some time, and that gives them the colour, white wines the skins are removed sooner.
