Question: I'm making stuffed chicken marsala and i can't find "marsala" wine...?

I know NOTHING about cooking with wine. I looked up marsala wine and it said it was a white wine. Can I use sauvignon blanc instead? Wow! I'm totally wine stupid!! LOL! Thanks everyone!!! |

You could use a different white wine for the dish but then it wouldn't be chicken "Marsala " because that specific cooking wine has a particular taste. Instead it would be just "Stuffed Chicken " which is fine too. I do not think your dish would suffer tremendously by lacking it. |

Look in the cooking section and look for cooking Marsala. But if you use Sauvignon Blanc you chicken will be nasty. |

Ok. You may be confused here. Marsala is a collection of spices for an Indian flavor. A chicken marsala is a spicey chicken dish. As to wine, you are trying to match wine to the flavor of the dish. Chicken, being a light meat, may be dominated by a red wine so it is common to choose a white wine to go with it. If you are cooking with wine then any wine is fine. Wine will evaporate in the heat and only the residual flavor is left behind. I have never been impressed with the flavors left behind in a wine or beer cooking. The only time I find that alcohol is good is when you are adding it at the end or marinating in a strong sherry. |

Marsala is a red sweet wine,I don't know if they sell it at places like Walmart, I don;t think so , you really need to go to a REAL liquor store to find it. it is in the Italian section. Use whatever wine you have available as most wines are interchangeable......DON'T buy cooking wine.....IF you can't drink it, you don't want to cook with it either. |

Look up a little more, including "marsala wine substitute ". It can be very pale, it can be red, and it's fortified with brandy. Yes, you can substitute any wine you like, but as several sites said, if you do then you don't have Chicken Marsala any more. Marsala is a bit of a specialty wine and you may have to go to a place that specializes in wine. Possible substitutes in sites I read: any wine and add a touch of brandy, or use some vermouth or port with another wine. |
