Potassium sorbate is used to stop fermentation and to preserve wines... you either add it to the juice before adding the yeast, which helps the fermentation process, or you add it towards the end to stop the fermentation so that all the sugar isn't consumed. if you put it in and it stopped the fermentation (like its supposed to) you are done... the fermentation is NOT going to continue, unless you could somehow remove it again, which isn't practical. drink it, or give it away as a desert wine.
