A white chardonnay is always a safe bet with anything outside of red dishes. California and Australian chardonnays are always nice and easy to find. Also you may want to try a Viognier wine there is a nice blend with creamier dishes. |

I would say white, unless you're using beef for the meat...then red. |

Chili verde is traditionally with chicken or pork, try a icy cold Riesling such as Schwartz Katz. If you're using beef go with red, maybe a lambrusco. Because this food is somewhat spicy, you don't want the wine to be too dry. Something semisweet is better. |
