I always use cider vinegar, first of all my wife can't tolerate malt vinegar and I prefer the taste, there is also a lot of anecdotal evidence that it's good for your health, I certainly use it for colds and sore throats etc mixed with equal amounts of honey and hot water, but I digress. If you worried about the alcohol content of either, while it's impossible to get rid of all the alcohol, it's reduced to 0.1 - 0.5% alcohol by volume, quite safe for alcoholics or those who can't take alcohol on religious grounds. |

The only thing I would ever substitute for vinegar would be a different kind of vinegar. Balsamic vinegar is very strong and I wouldn't recommend it, however a gentler vinegar like cider, red wine, etc. An important consideration is what kind of recipe is it? |

I have used cider vinegar. I have also used white vinegar and then a little dry white wine. It is not rocket science. . |
